About Me

Hey Y'all!

My name is Tara and I created this blog as a way for me to have some sort of outlet for all of the things I have going on in my head - there's a lot! I plan on writing about a lot of things going on in my life (random thoughts/rants I need to get out into the world, family, friends, etc.). I also plan on sharing a lot of recipes because I LOVE to cook and bake! I have also recently started reading a ton of books now that I have more time on my hands (more about this later!), so I want to share my thoughts on various books that I finish reading - a mini book club if you will! This will be a kind of hodgepodge of things happening on my blog, but it's just a sneak peek into my brain and what goes on in it. My goal is to write a new post every Thursday, but I may post more often if I have a lot on my mind or less if I have a busy week. 

Here's a little bit about me:

I currently live in Chicago, IL where I am a graduate assistant athletic trainer. I am currently working towards getting my Master of Arts in Education and I will be graduating in December! I am originally from Dearborn Heights, MI which means I am a HUGE fan of Detroit sports teams - especially the Red Wings and Tigers! I am an alumna of Michigan State University where I graduated in 2017 with my B.S. in Athletic Training - GO GREEN!
When I am not working as an athletic trainer or sitting in class, I enjoy working out, cooking/baking, eating, reading, binging on Netflix/Hulu, snuggling with my kitty, and chatting with my family and friends. 

I hope you enjoy getting to know me and getting a little insight on what the heck goes on inside this head of mine!

Garlic Broccoli Shrimp Stir-Fry

So simple, so yummy! I found this recipe on the beloved Tasty by Buzzfeed app and made it a while ago with the mental note of making it again and often; it is so easy and very yummy!  For more sustenance I ate it with brown rice, but you could serve it with noodles, quinoa, or just about any other starch you like! This recipe is so simple and versatile; jazz it up however you like! It made about 4 helpings for me, perfect for meal prep! Here's the ingredient list: - 1 lb. large shrimp, peeled and deveined* - 3 cloves of garlic, minced - 2 cups of broccoli - 1/2 onion, diced** - 1 tbsp. soy sauce (I used low sodium) - 2 tbsp. sesame oil, divided*** - 1/2 tsp. salt, divided *I actually prefer to buy the precooked shrimp from the meat/seafood counter at the store, but you can use raw if you prefer!  **We all know I have an aversion to the texture of cooked onion, so for this I subbed about a 1/2 tbsp. of onion powder ***If you don't have sesame oi...

Chicken Noodle Soup

It's officially fall, which means... It is SOUP season! I found a decent recipe for classic homemade chicken noodle soup and I was fairly please with it. I spiced it up a bit and added some extra garlic and onion powder and added some dried oregano or dried rosemary with a bowl if I was feeling it. Great for those chilly fall days or for anytime you're feeling under the weather! This made about 8 servings, which was dinner for over a week for me! Here's the recipe: - 2 tbsp. butter (I used salted because I was using low-sodium chicken broth) - 1 cup of onion, diced (If you're like me and have an aversion to the texture of cooked onions, you could sub this for a couple of big tablespoons of onion powder) - 2 garlic cloves, minced - 1 cup of celery, diced - 1 cup of carrot, diced - 1/2 lb. cooked chicken, shredded (A rotisserie chicken works great for this - I believe I used the whole chicken!) - 7 cups of chicken broth - 2 cups of egg noodles (you ...
