Garlic Broccoli Shrimp Stir-Fry

So simple, so yummy!

I found this recipe on the beloved Tasty by Buzzfeed app and made it a while ago with the mental note of making it again and often; it is so easy and very yummy! 

For more sustenance I ate it with brown rice, but you could serve it with noodles, quinoa, or just about any other starch you like! This recipe is so simple and versatile; jazz it up however you like! It made about 4 helpings for me, perfect for meal prep!

Here's the ingredient list:
- 1 lb. large shrimp, peeled and deveined*
- 3 cloves of garlic, minced
- 2 cups of broccoli
- 1/2 onion, diced**
- 1 tbsp. soy sauce (I used low sodium)
- 2 tbsp. sesame oil, divided***
- 1/2 tsp. salt, divided

*I actually prefer to buy the precooked shrimp from the meat/seafood counter at the store, but you can use raw if you prefer!
 **We all know I have an aversion to the texture of cooked onion, so for this I subbed about a 1/2 tbsp. of onion powder
***If you don't have sesame oil, vegetable or canola oil works just as well!

Here's how to make it:
1. Heat 1 tbsp. of sesame oil in a large, nonstick skillet over medium heat
2. Add shrimp and 1/4 tsp. salt
3. Fry shrimp for 1 min. each side
4. Remove shrimp; add in remaining sesame oil
5. Add onion (if you don't sub for onion powder) and remaining salt and saute until onion is soft*
6. Add broccoli, garlic, and soy sauce and saute until garlic is fragrant (~30 secs)
7. Toss shrimp back into pan, mix until all ingredients are incorporated, and fry for for another minute (or until shrimp is fully cooked if starting with raw shrimp)
8. Enjoy!

*If you are like me and hate onions, add the onion powder when you are frying the shrimp for the last minute so the flavor is incorporated amongst all the ingredients!

Busy, Busy, Busy

Whew! It has been a CRAZY past couple of weeks, which is why I haven't written in so long. Work has definitely picked up in the last 2 weeks with every fall season sport arriving on campus and beginning their preseason camps. Luckily, tennis was one of the last teams to show up, but in the time it took for their arrival day to come, I was slammed with admin projects and asked to cover a bunch of other sports last minute. Cinnamon Banana Pancakes This recipe is SUPER easy and so yummy! I was skeptical at first because there is no flour in the recipe and I thought the pancakes would be nearly impossible to flip. However, I was wrong! The egg is a great binder for the recipe and I thought the pancakes were very easy to flip and transfer to a plate. This recipe yields ~10 pancakes, but you can always make the pancakes smaller in an effort to get more pancakes out of it. Ingredients 1 banana 2 eggs ¼ tsp. Cinnamon Directions In a bowl, mash the banana with a fork Add eggs and cinnamon; mix until combined Heat a nonstick skillet over medium heat. Add ~¼ cup of batter and cook for 3-4 minutes, then flip and cook for another 3-4 minutes. Serve w/maple syrup, honey, of any other fixings you like to put on pancakes!
